baby leaf salad with kefir-pomegranate molasses dressing

Coming up with alternative salad dressings is (no joke) one of our favourite past times. It's such a quick and easy thing to get creative with and let's be honest, a good salad dressing has a massive influence on the outcome of a meal. Initially we wanted to make this dressing with ver juice, but good ver juice is hard to come by in Berlin so we opted for kefir instead. Kefir is light and has a wonderful acidity to it which is exactly what you need for a successful dressing!


4 tbsp olive oil
1 tsp dijon mustard
3 tbsp kefir
pinch of paprika
½ tbsp pomegranate molasses  
salt and pepper to taste
150 g mixed leaf salad (whatever is in season and looks good) 
1 small bunch of radish, finely sliced
2 spring onions, finely sliced  
pomegranate seeds (to garnish, optional)


1. For the vinaigrette: beat together olive oil, mustard, kefir, pomegranate molasses and paprika. Season with salt and pepper to taste.
2. Combine salad, radish and spring onion and mix with dressing. Scatter with pomegranate seeds if using.
